So easy and so great to eat.

My all-time favourite afternoon snack!

What You'll Need;

1 large eggplant

2/3 cup bread crumb

1/3 parmesan cheese

1 tbsp each of finely chopped parsley, thyme and oregano

Pinch of chilli flakes

Salt and pepper to taste


Preheat the oven at 200 degrees Celcius. Thinly slice the eggplants with the same thickness, generously sprinkle some salt and keep aside.

After 10 min, dry the eggplant slices with all the excess water.

Lay them individually on the baking paper in the baking tray. Then sprinkle generously the breadcrumb mixture on top of the eggplant slices. Bake in the preheated oven for 15 min or until done.

Serve warm.
