One-Pot Spiced Rice with Capsicum

The one-pot dish can be a lifesaver if you are pressing time and when the last thing you want to do is work in the kitchen cleaning a sink full of dishes after you've already cooked dinner. Here is a simple recipe that is comforting and yet scrumptious for you and your family.


What do you need;


4 Chicken Thighs

1 Yellow Capsicum – sliced

1 Red Capsicum - sliced

1 big sweet tomato - diced

1 White Onion – sliced

3 garlic cloves – minced

2 dried chillies –thinly sliced

1 tbsp paprika powder

1 tsp chilli powder (optional) or add more if you like spicy

Bunch of Thyme 

Bunch of Parsley

1 cup of rice

1 1/2 cup of chicken stock

Salt and Pepper

2 tbsp olive oil


How


Start by cleaning the chicken, wipe dry and then generously rub with salt and pepper.

Wash the rice.

Heat olive oil in a heavy bottom pot (tagine pot is preferable), add the chicken thighs and brown them all over, take it out and keep aside.

Using the same pot, fry the garlic and the thinly sliced dried chilli, then add the paprika and chilli powder. Stir well before adding the onion and capsicums. Let it cook until the onion and capsicum are soft, then add the rice. When the rice is translucent, add the tomatoes and all the herbs, stirring constantly for about 5 minutes. Add the chicken and the chicken stock and mix well. Let it cook under medium heat for at least 15 minutes, stirring occasionally.

Switch the fire off before all the water is completely absorbed by the rice. You will want to let it steam without heat for about 10 minutes before opening the lid.


Sprinkle some parsley on top and voila! Your meal is ready.
