And today, we will make another quick and easy recipe chicken recipe. :)
What You'll Need;
4 Chicken Thighs
Pinch of Turmeric powder
Salt and pepper
Some oil for browning the chicken
The spice Paste;
3 garlic clove
½ inch ginger
1 tsp cumin seed
10 pieces of dried chillies
1 lemongrass stalk - crush
1/2 cinnamon stick
3 tbsp tomato paste
2 or 3 tbsp honey
½ cup chicken stock
1 white Onion – slice thickly into a ring
6 cherry tomatoes
½ cup green peas
Clean the chicken thighs, wipe dry and generously rub with salt, pepper and turmeric powder.
Then heat the frying pan, fry the chicken until golden brown for both sides (the chicken should be half cook by now). Take it out and keep aside.
Blend the spice paste.
In the same pan, reduce the oil that you used for frying the chicken, cook the spice paste together with the lemongrass, cinnamon stick and star anise until fragrant and the paste look shiny about 10 min. When the paste is fragrant, add the tomato paste, honey, cherry tomatoes and chicken stock stir well, then add the chicken and the white onion. Stirring occasionally.
When the sauce is thickened, and the onion soft add the green peas and cook for another 5 to 10 minutes.
Then VOILA your dinner is ready.
Serve with steam white rice and your favourite vegetables.
