I know, I know...
I promised to post 2 to 3 recipes per week, unfortunately life can throw you unexpected obstacles and keep you busier than you intended to be. But, here is a recipe I'm sure you all will love.
This one-pan meal gets dinner on the table in absolutely no time. It's simple enough for a weeknight, but impressive enough to serve at a fancy dinner party. This is one of my kids favourite, comfort foods that makes everybody who eats it happy.
What you need:
4 chicken thighs
Handful of peeled seedless green grapes
Handful of peeled seedless black grapes
1 white onion – sliced
Bunch of rosemary
Bunch of thyme
Bunch of parsley
2 tbsp cooking cream
2 tbsp chicken stock
Salt and pepper
How
Preheat the oven to 200 degrees Celsius.
Clean the chicken, wipe dry and generously rub with salt and pepper.
Put the chicken onto an oven tray and add all the grapes, onions and herbs and then drizzle with olive oil.
Cover with aluminium foil and bake for 20 minutes.
Remove the foil and bake again for another 10 minutes or until the chicken is cooked through.
Put the chicken on a separate plate and keep warm.
Put the baking tray with the chicken juices on the open fire, add chicken stock, reduce the sauce then add the cream.
Serve by placing the chicken on individual plates, spoon the sauce with the grapes on top.
Serve with a fresh baguette.
